Power Balls

Over the years I’ve spent who knows how much money on all sorts of different sports nutrition bars. Here is a recipe for some great energy-boosting balls.

Ingredients:

  • 1/2 cup dates
  • ½ cup pecans
  • 1/3 cup coconut
  • 1/3 cup peanut butter
  • ¼ cup ground flax
Directions:
  1. Place all ingredients in your food processor and blend. You can also hand chop or use a regular blender. I don’t have a food processor and I enjoy chopping.
  2. Form into 1 inch balls and roll in coconut.
  3. Refrigerate.

If it’s too thick add ¼ cup of warm water and blend again.

You can mix and match different ingredients. Just remember it needs to have a sticky enough binder (dates, peanut butter) to hold it together.

Throw the cooled power balls in a mason jar, put a bow on it, and you’ve got your gift.
